This warehouse conversion on Canal Street in Manchester provided a four level eating and drinking experience, which would revolutionise the cultural scene in the city. London based entrepreneur Oliver Peyton commissioned Harrison Ince to work alongside furniture and interior designers Marc Newson and Andrew Martin to realise his futuristic dream. Designed around a microbrewery, which raised the full height of the building providing a consistent backdrop to the interior, the new elements paid no respect to their original counterparts. The typical Manchester warehouse features were becoming a cliché in every interior and the simple but very bold approach used at Mash and Air was a most welcome addition to the city. The lowest level was a bar, with two separate restaurants on the second and fourth floors. Air was situated on the highest level and was a dining delight with sunken booths and panoramic vistas over Manchester.
